Back to School
My professor looks like Dumbledore. YES.
New co-worker Kris brought us muffins for breakfast, Allergan brought us Greek salad, hummus and pita bread, grilled chicken kabobs and fire-roasted veggies, and I had a Chipotle chicken salad with an Izze for dinner. ‘Twas a good day for my tummy! (Taken with instagram)
S’mores Cupcakes

I really wanted to use the immersion blender Linhbergh and Thao got me for Christmas, so I thought I would bake something that called for meringue. After all, that is the explanation Linhbergh gave me for the gift: now he would never have to whisk egg whites for me ever again.
(Amanda! We’ll bake something else in February, sorry. Maybe strawberry cupcakes?)
This cupcake is fairly simple to bake. I put a piece of Hershey’s chocolate in every chocolate cupcake, then topped it with a simple vanilla meringue and “garnished” each one with a Teddy Graham. Then I put them back in to the oven to brown the top; you have to keep an eye on them while you do this! It seems like nothing is happening for awhile, but if you step away they will burn. This includes the Teddy Grahams, and that’s just sad.

Also sad is when one of them dies.
